There is nothing like a freshly baked cookie, fresh out of the oven. Soft and gooey chocolate chip, chewy oatmeal raisins, or little decorated sugar cookies. I love baking them with kids or enjoying them alone to lift my mood. This is a guide on the basics of baking cookies, and it will take you through the process step by step, so you’ll have soft, moist, delicious cookies every time.

  • Bring your wet ingredients to room temperatures, like the eggs or butter. This is important so that the ingredients mix well together without having any butter lumps of undissolved sugar.
  • For moist, soft cookies, use brown sugar instead of white sugar in your recipe. Brown sugar contains more moisture and will keep your cookies soft.   • Chill your dough in the fridge before putting it in the oven. This will slow down the spreading of your dough, resulting in thick and chewy cookies.
  • For best results with chocolate chip cookies, opt for milk chocolate or semi-sweet chocolate for baking.
  • Bake time for your cookies will depend on your recipe. Most recipes give a range (like 10 – 12 minutes), so lean towards less baking time for softer cookies or the higher baking time for crispier cookies. A good general rule for soft and gooey cookies is that as soon as the edges start to brown, remove them from the heat.
  • After baking, make sure your cookies are completely cooled before storing. Place them in an airtight container or bag and keep them at room temperature.
  • You can freeze cookie dough by wrapping it tightly in plastic wrap, and that should last several months. Let it defrost in the refrigerator for 24 hours before using.
  • Bake your cookies on a non-stick cookie sheet for a better release. If you’re making cookies with sprinkles, candies, or chocolate in them, you can also add parchment paper to your non-stick pan. This will help prevent the candy or sprinkles from burning.
