Soft Gingerbread Man Cookies Recipe

Sweet and perfectly spiced soft gingerbread man cookies. Add a little icing decoration and they will cheer up the holidays.

  • 113 g (1/2 cup) unsalted butter softened
  • 100 g (1/2 cup) brown sugar
  • 170 g (1/2 cup) molasses
  • 1 egg
  • 300 g (2.5 cups) all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp all-spice

For the royal icing

  • 1 cup Icing sugar
  • water


  • In a medium, bowl cream together butter and brown sugar for 1-2 minutes until creamy and smooth.
  • Add the molasses and egg, and mix to combine.
  • Add flour, salt, baking soda, and spices. Mix until completely combined.
  • Transfer the gingerbread cookie dough onto a piece of plastic wrap. Wrap it tightly and let it chill in the refrigerator for 1 - 2 hours.
  • Preheat the oven to 170°C and line two baking sheets with parchment paper.
  • Roll out the gingerbread cookie dough on a floured surface to about ¼" thickness. Cut into desired shapes with cookie cutters.
  • Transfer the cookies to the baking sheets and bake for 10 minutes until they become golden around the edges.
  • Cool completely and decorate with royal icing.

Easy Royal Icing

  • Put a cup of icing sugar in a bowl, gradually add a little bit of water at a time and stir until it reaches the desired piping consistency
