Indulge in the sweet flavors of summer with this Peach Upside-Down Cake, a stunning and delicious dessert that’s sure to impress. This cake features a layer of ripe, juicy peaches, thinly sliced and caramelized to perfection, topped with a tender, spiced cake that’s moist and full of flavor. I’ve added all-spice but you can also use nutmeg or leave the spice out altogether.
The process is simple: arrange the peach slices, drizzle with a light caramel sauce, and pour the cake batter on top. After a quick 30-minute bake, let it cool, then flip to reveal a gorgeous, golden peach topping. It’s the ideal treat to showcase the best of peach season.
Peach Upside-Down Cake
A layer of ripe, juicy peaches, thinly sliced and caramelized to perfection, topped with a tender, spiced cake that’s moist and full of flavor.
Preheat your oven to 175°C. Butter a 9-inch cake pan, then line the bottom with a round of parchment paper.
Pit the peaches and thinly slice them. Arrange the peach slices in an even pattern across the bottom of the prepared pan.
In a saucepan, combine the caramel ingredients – 100g of sugar with ¼ cup (60ml) of water. Cook over medium-high heat, stirring occasionally, until the mixture turns a golden color, about 10-12 minutes. Immediately remove from heat and carefully pour the caramel evenly over the peach slices in the pan.
In a medium bowl, beat the butter and 150g of sugar until light and fluffy.
Add the eggs and vanilla extract and mix well.
Add the flour, baking powder, and salt. Add the all-spice if using. Mix just until combined.
Spread the batter evenly over the peaches and caramel in the pan.
Bake for 30 to 35 minutes, or until the top is golden brown, and the cake is fully set.
Allow the cake to cool completely before turning over. Run a knife around the edges of the pan, then place a serving platter on top and invert the cake onto the platter. If any peach slices stick to the pan, carefully lift them and arrange them on top of the cake.
