Our friends and neighbors were over at our place and they wanted to make dessert together. Since it’s summertime and I don’t feel like firing up the oven that much, why not make strawberry frozen yogurt? It’s healthy, contains natural sugars from honey and fruits, and a great way to sneak in some fruits in kids’ snacks.

Yogurt straight out of the carton contains a good amount of water and not a lot of fat. When you freeze it, the water forms crystals that make fro-yo icy and non-creamy. So to make it correctly, you need to mix it with cream or mascarpone to increase fat. Then use an ice cream machine to churn it too. While all this is great, I opted for the easier kid-friendly option, where you  just blend some yogurt with frozen fruits and honey. We made it with frozen strawberries, but you can swap that for any frozen fruit you like, using the same amounts. I have edited the amount of ingredients recently to make it thicker and you can enjoy it straight from the blender, so the correct one is the written recipe here, not the amounts in the video.

Strawberry Frozen Yogurt

Ingredients
  

  • 2 cups frozen strawberries
  • 1/4 cup yogurt
  • 3 tbsp honey or maple syrup

Instructions
 

  • Mix all ingredients together in the blender until well combined and thickened.
  • The mixture should be thick to serve right away. If not, pour in a container and freeze for 2 hours before serving.
